Ginger-Almond Apple Muffin Tops (GF)
Soft fluffy muffin tops packed with apples and flavored with almond and ginger.

This recipe was adapted from a King Arthur Baking Company Recipe for Gluten Free Muffins. I had just gone to the apple orchard and the autumn vibes had me craving a treat with my afternoon tea. I wanted to use fall flavors but do something a bit different from the ubiquitous pumpkin spice blend we’re all so used to. Ginger and almond came to me as it seems that they also create that warm cozy taste we want in a fall bake.

Ginger-Almond Apple Muffin Tops

BATTER
131g Coconut Sugar
113g Soft butter
1/2 tsp salt
2 tsp baking powder
1 tsp ginger
1/2 tsp cardamom
1 tsp almond extract
2 large room temperature eggs
2 cups GF 1 to 1 flour (I used King Arthur)
1/2 cup apple cider
1 cup apple cut into 1/2" cubes

Crumble Topping
30g Organic Brown sugar
50g GF flour
20g Cold butter Cubed
1/4 tsp cardamom
1/4 tsp ginger
1/2 tsp almond extract

Method
Preheat oven to 350. Line two sheet pans with parchment paper.
Beat soft butter, sugar, baking powder, spices, and almond extract until fluffy. Add eggs one at a time combining fully before the next addition. Add 1/3 flour, then half cider, then 1/3 flour, then 1/2 cider and finally the last of the flour. Fold in apples and ensure the entire bowl is scraped down and all ingredients are fully combined.

Use an ice cream scoop to add very thick batter to the sheet pans. I got 10 muffins from this recipe and put 5 on each sheet.

Make the crumble topping by combining all ingredients in a food processor and pulse or use your fingers to rub together until the mixture forms a crumble.

Sprinkle a liberal amount of crumble on each muffin top. I also added a few additional cubes of apple as well.

Bake the muffin tops for 20-25 mins or until fully set and slightly golden brown.

The muffin tops are packed with apple chunks and the crumble topping adds additional sweetness and texture. The almond and ginger spice in the muffin and topping are layered to ensure the flavor is part of every bite.
