Paleo Apple Almond Muffins

These fluffy muffins will satisfy your desire for a baked treat when you are trying to eliminate grains, dairy and sugar.

I started to work on this recipe as I am working through a gut healing protocol. The requirements were that they be grain free, sugar free and dairy free. This may seem like a tall order but it’s amazing what can be done with alternative flours and whole food ingredients. These fluffy muffins are sweetened with apple butter and apple sauce. The flavor of apples is lovely when combined with almond butter and flour. Cinnamon and ginger add the warm fall flavor that we associate with fall bakes. I hope you enjoy them. They are a great alternative when you are trying to eat a low inflammation diet.

Paleo Apple Almond Muffins

1 Cup Apple Sauce
1/2 Cup Almond Butter
3 Eggs
4 Tbsp Apple Butter
1 Tsp Vanilla Extract
1 1/2 Cup Almond Flour
2 Tsp Baking Powder
1/2 Tsp Salt
2 Tsp Cinnamon 
1 Tsp Ginger Powder
1 Small Apple cut into 1/2" cubes
Sliced apple for garnish (optional)

Method:
Preheat the oven to 350. Line a muffin tin with baking cups.
Combine apple sauce, almond butter, eggs, apple butter and Vanilla in a medium/large bowl. Add almond flour, baking powder, salt, and spices. Fold in the diced apple. Use an ice cream scoop to fill the lined cups with the batter. 
Placed sliced apples on top and sprinkle with cinnamon, if desired. Bake for 20-25 minutes. Mine needed 23 on convection. 

Serve with apple butter or grass fed butter.
